Spirulina finds success in Dutch start-up’s algae chocolate
Dutch start-up The Algae Factory is pushing the foodpairing boundaries with its algae chocolate that contains sustainably sourced spirulina. This is a very unusual combination but the chocolate combines well with spirulina.
The company has worked a lot on the recipe to find the best variety of cocoa that can soften the taste of spirulina.
The Amsterdam-based startup first launched a dark chocolate and spirulina bar made with cocoa mass, raw cane sugar, cocoa butter, 3 g of spirulina and a soya lecithin emulsifier, before developing one with added hemp.
