Spirulina Gains Approval as a Naturally Derived Blue Colour in the US
The U.S. food and Drug Administration has approved Spirulina for use in the manufacture of food and beverage as a naturally derived blue colour in U.S. spirulina which was previously used only in candy and chewing gum, is now approved for use in frosting, ice cream, beverage mixes and powders, yogurts, puddings, gelatin, breadcrumbs and ready- to- eat cereals, excluding extruded cereals. Stable and beautiful green shades can be obtained by formulating spirulina with encapsulated turmeric or beta- carotene. Byron Madkins, director of business development of Chr Hansen (Denmark- based company that develops natural ingredient solutions such as cultures, enzymes, colours) states that the approval of spirulina as a natural (exempt from certification) blue colour makes the conversion from synthetic to naturally derived colours, a possibility.
